I mentioned earlier this week that the majority of Sunday was spend in the kitchen as a “food prep” day. While most of the food that I prep on the weekends is roasted veggies, chopped veggies, and lean protein options, I usually try to sneak in some sort of sweet treat. Brian likes something sweet in his lunch or after dinner, and I like to bake. The perfect pair.
Instead of making traditional chocolate chippers this weekend I thought I would throw my
mad scientist creative kitchen experiment hat on and see if the end result was worth eating and sharing with all of you.
These cookies don’t contain traditional flour, sugar, and butter, but they ended up tasting delicious and kept Brian (and myself 😉 ) going back for more!
Chocolate Raisin Oat Cookies made with Coconut Oil
Makes about 24 small cookies
- 1 ripe banana, smashed
- 2/3 cup unsweetened applesauce
- 1/3 cup honey
- 1 tsp vanilla
- 1/4 cup coconut oil
- 2 1/3 cup oats
- 2/3 cup almond meal
- 1 tsp baking powder
- 1/2 tsp cinnamon
- 1/2 tsp salt
- 1/2 cup chocolate chips
- 1/2 cup raisins
Preheat the oven to 350. In a mixer bowl, combine the banana, applesauce, vanilla, coconut oil, and honey. Mix until combined. Next, add in the oats, almond meal, baking powder, cinnamon, and salt. Again, stir until thoroughly combined. Once combined. Stir in the chocolate chips and the raisins.
Place by tablespoon onto a baking sheet and bake for 10-12 minutes, or until you can smell them cooking in the oven. Remove from the oven and place on waxed paper to cool. ENJOY!

Several times. I remember one break from college, I came home very excited to make a brand new eggplant dish. The dish was giant eggplant slabs with hummus, sauteed spinach, and some other things on top. It looked pretty, but literally I could NOT even swallow one bite. No one else in my family could swallow a bite either!
OOPS…ever since then they get leary when I tell them that I have a “healthy” recipe I want to try 😉
