Delicious Falafel Burgers

Happy Friday!

Was it just me, or did yesterday have a Friday feel to anyone else?

Just in case you were wondering, my chocolate cherry smoothie breakfast yesterday turned out great!  I made it the night before I wanted it  and put it in the freezer.  I then let it sit in the cup holder in my car while I worked out at the gym, showered, and got ready for the day.  Now, this idea may work better when the weather is warmer because I did end up having to eat my smoothie with a spoon because it had a very similar consistency to ice cream…but I’m not complaining about that!

This batch contained oats, chia seeds, Greek yogurt, nut and butter extract (this stuff is kind of weird but makes things taste like cake batter!), strawberries, banana, and stevia.

Falafel Burgers

I tried a meal this week that has been absolutely delicious and I have been so anxious to share it with you!

falafel burgerI was scouring the internet on Sunday searching for homemade veggie burger ideas that I could use for the week when I ran across Cooking Light’s falafel burger recipe.  I was hooked the moment I saw it.  The summer between my Junior and Senior year at Butler University, I interned in Washington DC and was introduced to the falafel at Amsterdam Falafel.   Since I lived in DC I honestly have not had falafel, so when I saw that this meal was easy to create and I had all of the necessary ingredients I was sold!

This restaurant allowed you to order falafel and top it with your favorite toppings including hummus, and my favorite…pickled vegetables.  (weird I know!)

Anyways, I made these burgers, with Amsterdam Falafel in mind.  The original recipe calls for bread crumbs on the outside of the burger, but I omitted that part of the recipe.

I made up all of the burgers and wrapped them up in wax paper until I was ready to cook them up.P1000267

Once they were cooked, I placed my burger on top of a bed of romaine and spinach with a side of roasted veggies.

falafel burgerToppings for both of us included chopped cucumber, chopped red onion, a dollop of hummus, and banana peppers (the closest thing I had to pickled veggies!)

falafel burgerMan, these were seriously so good!  I literally packed the leftovers for lunch every single day until they were gone, which was everyday except today :(

photo (8)These little burgers were so simple to make, completely delicious, and lasted all through the week.  I will definitely add these into my regular meal rotation :)

  2. Falafel is amazing! I get so excited whenever I discover a new restaurant that serves it. I have never tried making it at home, but this burger version sounds delicious. I will have to give it a try :).
