Finals are OFFICIALLY over for the semester! Phew!  I finally feel like I can truly enjoy the holiday season and relax (a little).

This weekend was full of a lot of non-studying ūüôā

Brian and I did lots of holiday shopping and errands on Saturday. ¬†Basically, we were Santa’s little elves.¬†Coffee at Aviano Denver

I also did a lot of singing this weekend.

And I took Bernie on his first run!  Saturday, it snowed quite a bit but by Sunday the sun had melted much of the accumulation.  While it was crisp and chilly, it was excellent running weather so I leashed up little Bern and drug him with me.

While he wasn’t¬†perfect¬†he did SO much better than he does while walking leash. ¬†It seemed as if he was born to run. ¬†I took him on another run this morning (just 1 mile) and he seems pooped! ¬†I have heard that many people train for half marathons and marathons with their vizslas, so I am excited to get Bernie used to running distances greater than one mile. ¬†But for now, a one mile run with him is great!

I also did a bit of holiday recipe creating this weekend, and I actually created the FIRST ever Treble in the Kitchen cocktail.

After my finals were complete, I was craving a refreshing holiday adult beverage and this cranberry kombucha mule came to fruition.

I created my own cranberry ginger simple syrup by combining maple syrup, water, ginger, and frozen cranberries (I love Wyman’s!)

I then subbed a ginger kombucha for the traditional ginger beer used in Moscow mules, squeezed in half a lime, and added in a bit of vodka for that adult beverage kick.

Kombucha is a fermented tea drink typically flavored with juice or fruit.  It is naturally bubbly due to the fermentation process and contains trace amounts of alcohol.  There is a small amount of sugar, about 4g a serving (usually half a bottle) this is typically added to fuel the fermentation.  The fermentation also allows lots of friendly bacteria (probiotics) to develop.

I feel like I was seeing kombucha cocktails pop up all over pinterest, and I am a huge Moscow mule fan.  In my mind, adding ginger kombucha and the homemade cranberry ginger simple syrup seemed like a perfect twist on the original.

Garnish with cranberries, lime and a sprig of rosemary and you will have a holiday drink to share with those you love.

Cranberry Kombucha Mule
 
A twist on the classic Moscow Mule! Make this drink with ginger kombucha and cranberry simple syrup for a fun and refreshing holiday drink.

Ingredients
  • Cranberry Ginger Simple Syrup:
  • 2 cups Wyman's frozen cranberries
  • ¾ cup maple syrup
  • 1 cup water
  • 1 Tbsp fresh, grated ginger
  • Cranberry Kombucha Mule (for one cocktail):
  • ½ lime
  • 1 part vodka (about ¼ cup)
  • 2-3 parts ginger kombucha (about ½ cup)
  • 2 Tbsp cranberry simple syrup
  • Garnish:
  • lime wedge
  • 2 cranberries on a toothpick
  • sprig of rosemary
Instructions
  1. Cranberry Ginger Simple Syrup:
  2. Combine all simple syrup ingredients in a saucepan. Place over medium high heat and cover. Allow to boil. Once boiling, reduce the heat to low and allow to simmer for 10 minutes. Then, drain the syrup into a bowl and smash the cranberries to get the most flavor.
  3. Cranberry Kombucha Mule:
  4. Squeeze half a lime into one mug, then drop it in. Add in 3-4 large ice cubes. Pour in the vodka and fill with the ginger kombucha and simple syrup. Stir, add your preferred garnishes and enjoy!
