It’s no secret…I love to bake.  I’ll be honest.  I’m kind of a stress baker.  If I have nervous energy, the best way for me to kill it is to bake up a tasty treat.  I also LOVE creating new baked good recipes, so as I paced back and forth in my apartment wondering what I could do to get rid of some energy related to a few tests last week I spied a bag of Love Grown Super Oats and the first thing that came to my mind was to whip up a batch of cookies.

Have you guys tried Love Grown’s Super Oats?  They are a bit different than your traditional oats in such a good way. Super Oats are a combination of oats, chia, quinoa, and amaranth flakes! How cool is that?

These cookies have an amazing Super Oat base, but what else makes them amazing and delicious?

Oh! And I forgot to mention these cookies are dairy and egg free 🙂

Serves: 12 cookies
Ingredients
  • 2 cups almond flour
  • 1 cup Love Grown Super Oats
  • ½ tsp sea salt
  • ½ tsp baking soda
  • ¼ cup chopped walnuts
  • ¾ cup mini dark chocolate chips
  • ½ cup coconut oil
  • ¼ cup maple syrup
Instructions
  1. Preheat the oven to 325 degrees fahrenheit. Line a baking sheet with parchment paper or a baking mat.
  2. In a large bowl, combine the almond flour, super oats, sea salt and baking soda.
  3. In a separate bowl, mix together the coconut oil and maple syrup. Add to the dry ingredients and combine thoroughly.
  4. Add the walnuts and dark chocolate chips to the cookie dough.
  5. Scoop cookies with an ice cream scoop onto the prepared cookie sheets and flatten with damp hands before baking.
  6. Bake at 325 for 10-12 minutes.
  7. Allow to cool on wax paper and enjoy!

  1. Love the simplicity of ingredients you used. Can’t wait to try these! I definitely do more cooking/baking when I am stressed/nervous/avoiding doing something I don’t want to do.

  2. I’m not a stress baker…more like a stress cleaner! But I do love baking! I tend to bake when i’m bored or inspired or the weather is gloomy.

  3. These look amazing! I always get slightly disappointed when people bring oatmeal cookies to a gather, only to find out they are made with raisins rather than chocolate chips. Don’t get me wrong, raisins are tasty but chocolate chips are SO much better!

  4. I use those oats every time I make my oat/quinoa flake porridge! Like today! They are a staple! (P.s. come to my blog…we can have a chocolate chip cookie party 😉 ) Hahaha!
