Low FODMAP zucchini boats put warm-weather seasonal produce to use as a delicious and beautiful vessel for a nutritious pasta-sauce covered filling. These boats are weeknight simple and bursting with flavor.

I am SO thankful we are midway through April and the warm days are outnumbering the colder, cloudy, rainy days…are ya with me!?
With warmer weather comes fresh herbs and produce. The flavors are more vibrant and colors are rich. Even just thinking about warm-weather produce and planting my own garden has me super excited!
Growing up, my mom would plant a garden full of tomatoes, green beans, cucumbers, herbs, and my favorite…zucchini! If we didn’t have a zucchini plant for some reason or another, a coworker of hers would give us a zucchini bigger than my arm (no joke!) and we would have fresh garden zucchini for days.
I’m hoping that this year, as I attempt my first garden in an actual garden bed rather than containers on an apartment balcony I have success in growing a couple of zucchini. A girl can dream.
I’ve always adored zucchini, but another reason I love it now is because it is low FODMAP in a half cup serving according to the Monash University app.
For this recipe I partnered with FODY Foods, a company that specializes in low FODMAP condiments, seasonings, snack mixes and granola bars. While I typically make my own sauces, condiments, and seasonings I’ll be the first to say it’s SO nice to have someone do the work for me on occasion. Not only are they doing the work, but they are creating DELICIOUS products with ingredient lists that contain just that…ingredients!! Hallelujah!
These boats are filled with a combination of ground meat (you could sub lentils here!), carrots, brown rice, low FODMAP seasonings, and either the Marina or the Tomato Basil from FODY Foods. I love them both!!
We enjoyed these boats with our typical side salad, but you can serve them with whatever side you prefer!
