Slow Cooker Pesto Chicken

Serves: 2-3 servings
  • 2 Tbsp pesto
  • 2 chicken breasts, thawed
  • 6 cups of roughly chopped vegetables (I liked a mix of zucchini, green beans, and cherry tomatoes)
  1. Place the chicken in the bottom of the slow cooker.
  2. Top each chicken breast with one tablespoon of pesto.
  3. Top with the vegetables.
  4. Cook on low for about 7-8 hours.
  5. Serve and enjoy!
*Ingredients are considered low FODMAP according to the Monash University app.
